Can you guess what is inside? Another fried rice - product of my new experiment. I used pickled baby cucumbers, pressed mustard and dried shrimp for this fried rice, then wrapped in omelet. Recipe for fried rice (2 servings):
10 pickled baby cucumbers (thinly sliced)
2 tbsp chopped pressed mustard
1 tbsp dried shrimp (soaked and finely chopped)
1 tbsp dried shrimp (soaked and finely chopped)
2 cups cooked rice (leftover rice recommended)
1 tbsp cooking oil
Directions:
- Heat cooking oil in a frying pan over low heat, add in chopped shrimp and gently fry until lightly brown.
- Add in pickles and stir fry for 1-2 minutes.
- Add in rice and stir fry for another 2-3 minutes, ready to serve.
