Home Made Laksa

I have been cooking laksa for a lot of times since I moved to Sydney. I have never cooked laksa at home when I was living in Singapore. It was so convenient to buy from the hawker centres or food courts and more cost effective too. Even though I can buy laksa at food courts at the place I am living now, but each time it tastes different. In other words the quality is not consistent.

Usually the ingredients I use in cooking laksa base on what I have in stock, and of course with the must have things such as curry powder, coconut milk and dried shrimp. Dried shrimp makes good soup base and coconut milk is the soul of the soup. I like vermicelli the most for laksa.
