Homemade Noodle / Pan Mian / 板面

板面 (Ban Mian)

Simple homemade noodle with fish balls, homemade too. This type of noodle is very popular amongst Chinese communities in both Malaysia and Singapore. The traditional way is cooking this noodle in clear soup, and topped with fried anchovies and shallots before serving.

I prefer thick pieces of "noodles" and eat it as hot as it can be. And... not to forget the dipping sauce - soy sauce with chopped chilli and garlic. I remember once my sis's Indo maid told me that "ma'am suka sup panas-panas, makan degan cili api". Yeap, my sis likes it hot with hot chilli too... that's what makes us sisters!

Homemade Noodle / Pan Mian / 板面

Ingredients (4 serves):
2 cup all purpose flour
1 small egg
pinch of salt
1 tbsp cooking oil
1/4 cup water

Dipping sauce (optional):
2-3 bird-eye chilies, chopped
1-2 clove garlic, chopped
1 tbsp soy sauce

Directions:
  1. Put four and salt in a mixing bowl, stir to mix.
  2. Make a well in the middle of flour, add in egg, cooking oil and water.
  3. Mix well with fingers then knead for about 5 minutes until dough is form.
  4. Divide dough into 4 small balls, cover with plastic wrap and let rest for 15 minutes or so.
  5. Meanwhile prepare your favourite soup. When the soup is boiled, let it simmer over small flame.
  6. Get a small ball of dough and use fingers to pull the dough to make a thin and small sheet, and drop it into the soup straight away.
  7. Repeat until finish. Once the noodle is cooked, it will float on the surface.

This is how I make the noodle. You may also roll the dough into thin a sheet on a slightly floured surface then cut into small pieces.

    You can use any clear soup recipe for this. If you like tomyam, cook in tomyam tastes good too.
    I usually cooked in ikan bilis (dried anchovies) soup, with mushroom, meat, veges, egg and fried ikan bilis.

    >Heat 2 tbsp oil in wok, fry shallot until golden brown. Remove and setaside.
    >Stir in ikan bilis and fry for few seconds (don't have to brown), add in water (for soup) and bring to boil.
    >Add in shiitake mushrom slices and let in boil for a few seconds.
    >Turn the heat down, and let it simmer.
    >Get some soup (for single serving)in seperate pot, add in noodles.
    >Once done with noodles, add in meat (bite size, marinated with soy sauce, garlic, sesame oil and corn starch) and vege. Bring to boil and add in egg if desired.
    >Transfer noodle to bowl, sprinke with fried shallot and anchovies.
