Orange Flavour Eggplant

Orange Flavour Eggplant
Got this idea when eating orange while preparing dinner, added quarter orange (segment) into mum's eggplant recipe. Fruity taste and refreshing.

Ingredients (2 serves):
1 medium size eggplant (oval shape)
1 tbsp dried shrimp
1/4 orange
2 cloves garlic
1 tbsp cooking oil
1/2 cup water or stock
1/4 tsp dashi powder (omit this if you use stock)
Pinch of salt

  1. Wash and shock dried shrimp in warm water for 5-10 minutes, drain.
  2. Peel eggplant and cut into small pieces.
  3. Heat oil in non-stick pan and saute garlic over medium heat until fragrance.
  4. Stir in dried shrimp and cook for 1-2 minutes.
  5. Stir in eggplant and orange segments, cook until the eggplant is soften.
  6. Add water and seasoning. Continue to cook until the water is reduced.
  7. Garnish with coriander or shallot, serve warm with steamed rice.

Note: If you use the eggplant with lighter purple colour and soft peel, it is not necessary to peel it.
