Chicken Curry with Cabbage

Chicken Curry


I am trying to spice up my diet as I have been eating not so spicy food for almost 2 weeks. When I told Tak that I had curry for lunch, first question he asked "Ke yi meh?" Ke yi... No cheating, I did count the calories before I eat. I planned to eat with CornThin, but finished it all with salad. It was like eating salad with curry dressing. Yumm....


Ingredients (2 servings):

300g chicken thigh (without skin), cubed

¼ head cabbage, chopped

2 stalks lemongrass, lightly crushed

2 tbsp curry powder (mix with 1 tbsp water)

1 tbsp vegetable oil

3 cloves garlic, chopped

1 bulb shallot, chopped


Directions:

  1. Heat oil in a medium pot, sauté garlic and shallot until lightly browned.
  2. Add in lemongrass and curry paste, stir-fry until the mixture is relatively dry.
  3. Stir in chicken and stir to coat with curry paste. Cover and let it simmer on low heat until chicken is done.
  4. Add in cabbage and cook until it is softened.
  5. Add salt to taste.

Calorie: 298 per serving (without cornthin and salad)
