I am trying to spice up my diet as I have been eating not so spicy food for almost 2 weeks. When I told Tak that I had curry for lunch, first question he asked "Ke yi meh?" Ke yi... No cheating, I did count the calories before I eat. I planned to eat with CornThin, but finished it all with salad. It was like eating salad with curry dressing. Yumm....
Ingredients (2 servings):
300g chicken thigh (without skin), cubed
¼ head cabbage, chopped
2 stalks lemongrass, lightly crushed
2 tbsp curry powder (mix with 1 tbsp water)
1 tbsp vegetable oil
3 cloves garlic, chopped
1 bulb shallot, chopped
Directions:
- Heat oil in a medium pot, sauté garlic and shallot until lightly browned.
- Add in lemongrass and curry paste, stir-fry until the mixture is relatively dry.
- Stir in chicken and stir to coat with curry paste. Cover and let it simmer on low heat until chicken is done.
- Add in cabbage and cook until it is softened.
- Add salt to taste.
Calorie: 298 per serving (without cornthin and salad)
Think the cabbage will sweeten up the curry a bit, right?
