Oatbran Muffins

A packet of oatbran has been sitting in my pantry for quite a while, was not sure what to do with it until today. Baked oatbran muffin for the first time, a healthier choice of muffin I suppose. It tasted great but a bit dry as I subbed oil with milk. I love the wonderful oat taste, will definitely bake it again.

Tak ate his muffin with blue cheese and he loved it... strange combination.

Ingredients (4-6 pcs):

  • ¼ cup raw sugar
  • 1 large egg
  • ¾ cup all purpose flour
  • ¾ cup oatbran
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • 2 tbsp vegetable oil
  • 2 tbsp honey
  • ¼ cup fresh milk
  • ½ cup raisin


Directions:

  1. Put all ingredients except raisin in the food processor or blender, blend until combined.
  2. Stir in raisin and mix well. Transfer mixture into muffin cups, and let stand for 10 minutes.
  3. Meanwhile, preheat oven to 200C.
  4. Bake muffins for 15 minutes.

  1. All your muffins have nice dome-shaped top, any tricks in getting that...mind sharing?

  2. Tips:
    Preheat oven to higher temp, eg. 200C and turn it down to 175 or 180 soon after you put the muffin in.

    Fill muffin case upto 90% full.

    Mix well but not over mixed.
