Sweet Corn Pudding [Kueh Jagung]

Sweetcorn Pudding


Made this during holiday at my mom's place in Malaysia. My eldest sister once told me she likes this pudding but I only managed to make her one now which is a few years later! This pudding was one of the popular desserts served on the wedding day. When the groom and bestmen arrive at the bride's home some refreshments will be served while they are waiting for the bride. Nowadays, those traditional desserts are slowly replaced by western desserts - cake and such.

Ingredients:
200g custard powder
1 tbsp tapioca or corn flour
1 can creamy sweetcorn
1½ cup evaporated milk
1½ cup water
sugar to taste
pinch of salt

Direction:
  1. Mix all ingredients in a medium pot, stir until well mixed.
  2. Heat up the mixture on low heat and keep stirring until smooth paste is formed.
  3. Transfer the smooth paste into a 9" baking pan and steam on medium heat for 15 to 20 minutes. Cool completely before serve.

  6. This kuih is nice to serve chilled but not sure if the texture will change if keeping in the fridge overnight. My advise is to make a small portion for testing before making the bulk. Good luck.
