Steamed Chicken Rice (蒸鸡饭)

Chicken Rice

Quick lunch cooked with the leftover rice, it would be tastier with some salted fish flakes. It reminded me of the steamed rice dishes available at the food court located around Bukit Batok MRT station. Steamed rice served with hot soup of your choice cost S$4 or $4.50... that was few years ago.

To cook this dish, first marinate thin chicken slices with ginger, garlic, sesame oil, soy sauce, salt and pepper for 10 to 15 minutes. Then, arrange a thin layer of chicken on top of the rice and topped with salted egg yolk if desired. Steam over high heat for 15 minutes. Sprinkle some salted fish flakes and garnish with chopped shallot.

  1. Good idea for left over rice and it is easy to make too. The bowl reminds me a lot w/ my hometown. My mom has it too.
