Hi Lydia! The cupcakes still look really nice regardless. I would think the syrup used for dipping the fruits might be cooked to a later stage (crack or 144°C). As I've not done it before, I'm not sure if you should let them dry as is, finish it in the oven, or maybe even deep fry them :)
HiFantastic blog, love the photography!I must admit I've never tried dragon fruit, must give them a try.Regarding the glaze; have you tried the following:1. Add the glaze ingredients to a pan and bring to a boil.2. Lower to a medium heat and simmer until the mixture is thick but pourable.3. Remove from heat and let the glaze cool for a little before pouring over the fruit.4. Put the glaze in the refridgerator while you carry on cooking.Hope that helps :)
