Brownie Cheesecake

Bought two blocks of cream cheese few days ago, it was on promotion at Tesco. Some goods in Tesco are more expensive than in small grocery stores, but it will be real good deal when the promotion is on.


Back to the cream cheese, T gobbled up almost half block once we got home that day. He had it with olive and crackers. Did not expect he will eat cream cheese that way, I thought I would better bake the cake before they are all gone. This cake is different from the brownie cheesecake I baked previously, but the recipes are almost the same. I combined one bowl brownie and new york cheesecake recipes, baked brownie for 10 minutes then added cheese mixture and baked for further 1 hour with water bath.

By the way, it is "cheese cake" or "cheesecake"?

For those interested to try this recipe, I baked mine in 7" x 7" square pan with removable bottom (as in the photo). It is easier to take the cake out if using spring form pan (9") I think, but I used this square pan for a change.

Recipes copied and pasted from my other posts for eay reference, are you ready to bake? Please get ingredients for both brownie and cheesecake ready before start baking, so when the brownie is baking, the cream cheese will be soft enough to work with.

Brownie

Ingredients (9" or 7" x 7"):
100gm unsweetened chocolate
110gm butter
200gm sugar
2 eggs
2 tbsp milk
¼ tsp vanilla essence
120gm all-purpose flour, sifted
80gm chopped walnuts

Methods:

  1. Preheat oven to 180ºC. Grease and dust the pan with some flour.
  2. In a large mixing bowl, bring together butter and chocolate. Microwave on high for 2 minutes or until chocolate is melted. Mix well. Use double-boil method if microwave is not available.
  3. Whisk in sugar, eggs, milk and vanilla essence. Whisk until the sugar is melted.
  4. Stir in flour follow with chopped walnuts, mix until combined.
  5. Transfer mixture into the pan and bake for 10 to 15 minutes.

Cheesecake

Ingredients (9" or 7" x 7"):

  • 450g cream cheese
  • ¾ cup white sugar
  • ½ cup milk
    2 eggs
  • ½ cup sour cream
  • ½ tbsp vanilla extract
  • 2 tbsp cake flour, sifted

Methods:

  1. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and cake flour until smooth. Pour filling into the pan with brownie.
  2. Wrapped bottom of the pan with foil if necessary, then turn the oven down to 175ºC and bake with water-bath for for 1 hour.
  3. Turn the oven off, and let cake cool in oven with the door ajar. Chill in refrigerator until serving.

If you want to make swirls or patterns on the surface, save about ¼ cup of cheese mixture and add in desired flavour or colour. Use a piping bag to pipe the mixture on the surface, and use a skewer or knife to make swirl. I piped few lines then used a skewer to cut across those lines.
