干炒四季豆 (Stir Fried Green Beans)

Prepared dinner a bit earlier than I usually do yesterday, managed to snap this photo before the sun gone behind the mountains. Mom's style simple fried green beans with dried anchovies, we were grown up with stir fried vegetable dishes cooked with either dried anchovies or dried shrimp. This is a really quick dish, can be served with steamed rice or as a side dish.

Since John has started moving around, I always cooked something simple and quick or slow-cook dish with minimal preparation and washing. John is very attached to me right now, he is almost my second shadow. Whenever I am busy in the kitchen, he will be there too busy with stuffs on the floor and in the drawers. So far he had broken a saucer (luckily it was not my favourite one) and showered himself with breadcrumb. Papa said it was very expensive to shower with breadcrumb. :D Going to install a child lock soon, it is not healthy to say "don't" and "no" to a toddler. Lock it and save the troubles.

Ingredients (2 servings):
150g green beans, chopped diagonally
Carrot strips
Handful dried anchovies, rinsed and drained
2-3 cloves garlic, chopped
1 tbsp cooking oil
Salt to taste

Methods:
  1. Heat oil in pan, add in anchovies and fry until lightly browned.
  2. Add in garlic and green peas, stir fry for 1-2 minutes then add in carrot.
  3. Continue to stir fry for another 1 minute, add salt to taste.
  4. Transfer to serving plate.

Note: Carrot is for its colour, can be substituted with capsicum or other bright colour veges.

  4. My granny likes to cook vegetable dishes with dried anchovies or dried shrimps too especially with winter melon in summer.

    I have to chop green beans diagonally like yours, looks more pretty
