Mixed Veges Omelette

Simple home cook dish that my little boy enjoys a lot. I cooked this dish at my sister's place once with erringi mushroom, my sister was surprised to see her son ate lots of vegetables! Recently, I cooked it for my boy and he ate all vegetables in it. Try this if you want your children to eat more vegetables.
Ingredients:
1 clove garlic, minced
50g minced pork or chicken or prawn, marinate with 1 tsp sesame oil + 1 tsp corn flour
100g long bean, thinly sliced
50g carrot, shredded
50g fresh shiitake mushroom, shredded
1-2 eggs, lightly beaten
½ tsp corn flour + 1 tsp water
1 tbsp cooking oil
Salt to taste
Pepper to taste

Methods:
  1. Heat cooking oil in a non-stick pan, saute garlic then add in minced pork. Stir fry until pork has changed colour.
  2. Add in all vegetables, cook until long bean changed colour. If cooking for toddlers, cook little longer. Add about 2 tbsp of water, bring to boil.
  3. Add salt and pepper to taste, and cook until water has evaporated.
  4. Mix together beaten egg with corn flour solution, pour over vegetables and let it cook on medium heat until set.
  5. Serve with porridge or steamed rice.

  1. To make children eat veggie is really challenging! My boy doesn't eat broccoli and choi sum. So I have to chop the veggie so fine and cook them with fried rice or fried noodles. He can't pick out the veggie but chooses to eat them all!

    John is ok with broccoli if it is soft enough for him. I like to chopped up veggies and add into rice too.

    Thanks for this mixed vege omelette.. what a great idea for toddlers. Especially fussy one.

    My boy is coming to 2 and is a super fussy eater. I tried your omelette with one egg and some chopped up vege and mushrooms, I'm so surprised he din reject the food immediately, took half of what I had to offered (good enuf for me).

    I was so happy with his 'cooperation' on the weekend that I believe I'll be making the same thing again next weekend with some alternations to the ingredients i.e. different vege or add some meat.

    Thank you so much for this. Any other ideas which your John loves? It's so frustrating to feed fussy eater. They're forever challenging you to a whole new level, bringing new meaning to "anger"..... :}

    I agree with you 100%! It is so frustating when the little one refuse to eat vege. I learnt, if I force John to eat he would not eat. Now, I just leave the food on the table and he would eat it.

    John likes his vege, including fresh cucumber too. He loves carrot the most, my hb said John is weird cos kids dont like carrot in general.

    Well, I usually cooked stir-fry vege, few different type of veges in one dish to provide choices. Also, add vege in sushi, baked pasta/rice or even boil some vege for him to eat as snack.
