I used sponge cake mix for the cake, try this recipe if you are baking from scratch.
250g sponge cake mix
*4 large eggs
*60g vegetable oil
*as suggested on the packaging
200g semi-sweet chocolate chips
60ml full cream milk
50g desiccated coconut
- Prepare sponge cake batter according to the packaging instruction. Bake in a 8" square pan, at 175C for 30 minutes. Cool completely on rack.
- For ganache, heat milk with double boil method then stir in butter and chocolate chips. Stir until the paste is smooth.
- Cut sponge cake into 16 equal portions, coat each portion with ganache followed by desiccated coconut.
