Discovery by accident! Baked some muffins with leftover thicken cream, the result really surprised me! It is so soft and moist like the big muffin we usually buy from the gas station. Every time I eat the muffin from the gas station I wonder what ingredients they use to make it so soft and moist.
Ingredients (8-10 pcs):
1 ½ cup All Purpose Flour
2 tsp Baking Powder
½ tsp Salt
1 cup Castor Sugar
½ cup Butter
1 Egg
½ cup Thicken Cream
3 tbsp Lemon Juice
1 tbsp Lemon Zest
Topping :(optional)
1 tbsp Lemon Zest
2 tbsp Sugar
Directions:
- Preheat oven at 170C.
- Mix flour, baking powder and salt in a bowl. Set aside.
- In another mixing bowl, cream butter with sugar until creamy.
- Add in egg and beat until foamy. Slowly add in thicken cream and mix well.
- Add in lemon juice and zest and mix well.
- Sift and fold in flour.
- Fill muffin cups 3/4 full and bake for 20-25 minutes.
