Got this idea when eating orange while preparing dinner, added quarter orange (segment) into mum's eggplant recipe. Fruity taste and refreshing.
Ingredients (2 serves):
1 medium size eggplant (oval shape)
1 tbsp dried shrimp
1/4 orange
2 cloves garlic
1 tbsp cooking oil
1/2 cup water or stock
1/4 tsp dashi powder (omit this if you use stock)
1/4 tsp dashi powder (omit this if you use stock)
Pinch of salt
Directions:
- Wash and shock dried shrimp in warm water for 5-10 minutes, drain.
- Peel eggplant and cut into small pieces.
- Heat oil in non-stick pan and saute garlic over medium heat until fragrance.
- Stir in dried shrimp and cook for 1-2 minutes.
- Stir in eggplant and orange segments, cook until the eggplant is soften.
- Add water and seasoning. Continue to cook until the water is reduced.
- Garnish with coriander or shallot, serve warm with steamed rice.
Note: If you use the eggplant with lighter purple colour and soft peel, it is not necessary to peel it.
