TGIF! Finally got some spare times to update my blog. Baked a small cheese cake on Tak's request, but at the end I ate more than him! Bad... felt guilty for a few days. The original recipe is actually for a whole 9" cake but as usual I havled the recipe and baked with loaf pan. Still, it was too much for us. And, the bar idea I got it from Yani... I am a big copycat!
Ingredients (9"):
80g short bread, crushed
1 tbsp butter, melted
Filling:
450g cream cheese
¾ cup white sugar
½ cup milk
2 eggs
½ cup sour cream
½ tbsp vanilla extract
2 tbsp cake flour, sifted
Directions:
- Preheat oven to 175 degrees C. Grease a loaf pan or line it with baking paper.
In a medium bowl, mix together short bread crumbs with melted butter. Press the mixture evenly onto bottom of the loaf pan. - In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and cake flour until smooth. Pour filling into prepared crust.
- Bake in preheated oven for 45-50 minutes. Turn the oven off, and let cake cool in oven with the door ajar. Chill in refrigerator until serving.
Note: This recipe is for 9" pan, but methods above are for halved recipe baked with loaf pan to make bars. For 9" round cake, bake for 1 hour.
It's like a huge cheesecake-flavored candy, the way you wrap. I use the foil as the "mould" too, to "shape" my "bakes" sometimes. :)
ReplyDeletei was thinking to use plastic gift wrap, but it was hard to twist the ends. foil is easier to wrap but presentation wise gift wrap is better. The other day i found lots of cookies packing materials at bargain shop, it's like want to buy everything home. The small ribbon, plastic bags, tags.. etc.

In Malaysia, those biscuits are available in any grocery shops, minimarts and supermarkets. Try to read the label on the package, main ingredients are flour, sugar and butter.
For this cheesecake, Marie biscuit also alright to use as base (same method). Nowadays, I bake cheesecake with sweet pastry base, taste good too. You can try my sweet pastry base recipe, available at Sweet Potato Tart recipe. I baked the pastry for 5-10 minutes before adding in cheese mixture. All the best!
