Pasta Salad III


Another fusion style pasta dish cooked with what I had on hand, salted egg and eggplant. The combination sounds weird but tasted delicious. The saltiness from the salted egg and the sweetness from the eggplant complement each other. Hmm... don't know how to describe the taste, if you wanna know it tastes like... try this recipe, but... at your on risk! :D

Ingredients (2 servings):
Pasta, cooked as directed on the packaging
2 boiled salted eggs, shelled and chopped
1 medium eggplant, sliced
2 cloves garlic, minced
2 tbsp olive oil
Grated parmesan cheese
Chopped parsley

  1. Heat olive oil in a skillet, stir in garlic and eggplant slices. Cook for 1-2 minutes or until the eggplant is softened.
  2. Stir in half amount of salted egg, cook until the egg yolk is melted.
  3. Stir in cooked pasta, season with salt and pepper.
  4. Dish out, topped with another half amount of chopped salted egg. Garnish with parsley and cheese, serve warm. Add extra olive oil before serving if desired.
