This will be the last cookie I baked for CNY 2011. All my family members loved it so much when I baked it for the first time two years ago. Thus, I baked lots of it this year for them to bring home some.
You can also use this recipe to bake Peanut Cookies. Just replace the green peas with roasted peanuts.
Green Peas Cookie/青豆酥饼/グリンピースクッキー
Ingredients (makes 1.5 small container*):
120 gm green peas, snack type (grinded)
100 gm icing sugar
¼ tsp salt
180 gm cake flour
100 gm vegetable oil
Glazing (optional):
1 egg yolk
½ tbsp milk
*container for CNY cookies with the red lid
Methods:
- In a large mixing bowl, bring together all ingredients and mix until a dough is formed.
- Roll out dough between two sheets of plastic, about 1cm in thickness.
- Cut dough with cookies cutter and place onto baking tray lined with baking paper.
- Glaze with egg yolk mixture.
- Bake in the preheated oven at 170ºC for about 15 mins or until the surface is browned.
- Cool completely on rack before storing.

Hi, the cookies look great! I'm keen to try the recipe. I noticed the cookies in this post looked better than the ones that you posted with the recipe. Did u omit the egg glaze and cut it thicker for this batch? Also how long did it stayed fresh?

ReplyDeleteThe one in this photo I used ground green peas from shop, guess it must contained some sort of food colouring. Yes, omitted glaze and cut it a little thicker.
Home made cookies do not contain preservation agent so I would say consume as soon as possible, but I know some ppl actually keep it for 6 months and still good to eat!
Hi Lydia, thanks for your reply! I've baked my first batch! Pretty crunchy and not the melt in the mouth type. Not sure if it's suppose to be like that or it's because I did not sift the flour/icing or that I added 30g less flour. Nevertheless, My hubby and I loved the cookies. Will try again. ReplyDeleteNot sure if you used store-bought ground green pea flour, if so less 30g flour shld be alright. From my experiences, cookies stayed crunchy for the first day, turned softer the next day and no longer crunchy. Sure you are welcome to share the recipe.
