Savoury Pancake

Pancake

Made a few versions of savoury pancakes for lunch. This photo is the spicy tuna version, topped with an egg. Also made some cheese and tomato pancakes... yum!! This pancake looks like a pizza but in term of taste is more like an open-face sandwich. Would definitely make this again for T when he is home.

Ingredients-Pancakes (4-5 Servings):
1 large egg
1¼ cup cold fresh milk
¾ cup all-purpose flour
¼ cup rice flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tsp sugar
Pinch of salt OR Chicken Stock
Some herbs (optional)

Toppings (Suggestion):
Eggs
Tuna Spread
Onion
Cheese
Sausage

Methods:
  1. Sift together flour, baking powder and baking soda. Set aside.
  2. Whisk eggs in a large mixing bowl. Stir in milk, sugar and salt. Mix well.
  3. Stir in sifted flour and mix till just combined. If the mixture is too thick, add a little bit more milk.
  4. Cook pancake with non-stick pan over low heat. When it is about ready, add toppings.
  5. Serve warm.

  2. AHHHhh. Your wonderful pancake recipe reminds me of my XMIL-2 (or was it XMIL-4? . . . I can't keep them straight) was the worst cook ever.

    She was a drunk who didn't believe in kitchen timers. (Read: Everything was grossly overcooked, if not completely burned.)

    She used to prepare pancakes for me and my second husband (or was it my fourth?). Whatever.

    She ALWAYS burned the pancakes, and I had to force them down or my ex-husband would put a real hurt on me.

    Now that I am living with "Big Bear", a lovable 450-pound, unemployed boy (can you call a 56-year-old a "boy") I am SOOooo happy with life.

    He knows how to cook pancakes without burning them. And I am going to print out your recipe so he can do it to it this weekend.
