A simple pasta dish that Tak fonds of when we visiting Rome. We had this pasta at a cafe near to Trevi Fountain. Since then, it has became one of his favourite lunch box menus.
Ingredients (2 persons):
150gm Bow Tie Pasta
1/4 cup thinly sliced Zucchini
1 tbsp Sliced Black Olive
1 tsp Dried Parsley
3-4 Anchovies, chopped
1 tbsp Olive Oil
Pinch of Salt
Directions:
- Cook pasta following the instruction on the packet.
- Add in sliced zucchini 2 minutes before pasta is cooked.
- Drain well.
- In a mixing bowl, bring together cooked pasta and zucchini, and all other ingredients. Toss to coat.
- Cool to room temperature before serving.
