Baked this onion bread for breakfast today. It was nice to have different bread for breakfast once awhile. Normally I bake a small white loaf in the morning just enough for one meal, so we can have freshly baked bread everyday.

You may add some herbs and vegetables to make it colourful and flavourful.
Ingredients:

125g bread flour
2 tsp dry yeast
2 ½ tbsp sugar
100ml warm water (40C)
*B*
125g bread flour
½ tsp salt
*******************************
150g onion, finely chopped
1 tsp Parmesan cheese
1 Egg - for egg wash
Methods:
- Place chopped onion in a bowl, and cook in microwave without cover for 4 minutes. Set aside for later use.
- For bread, bring together all ingredients *A* in a large mixing bowl, mix with a spatula until well combined. Then add in ingredients *B*, mix well to form dough.
- Turn out dough onto lightly floured surface, knead for about 10 to 15 minutes.
- Cover dough and rest for 20 minutes or until it is doubled in size. You may also prepare dough in bread maker.
- Punch down dough to remove air. Divide and shape dough into 2 balls. Cover and rest for another 10 minutes.
- Roll out each ball into 20x25cm rectangle, spread cooked onion and sprinkle cheese over the surface.
- Roll it up from the long side, then make a cut lengthwise leaving 2cm uncut at the end. Plait and pinch the ends to seal.
- Let it rise for 20 minutes or until doubled in size. Egg wash and bake in the preheated oven at 180ºC for 15 minutes.
