Banana Walnuts Muffin

Tak asked for blueberry muffin but I baked him banana muffin with walnuts! hehe... But, I used the blueberry muffin recipe that I jotted down somewhere. His comments: I need more banana... sweeter (he likes very sweet one)... bla...bla... since when he learned to comment?

Well, the next day he asked for the same muffin again for the following day's breakfast. The bakes will taste better and sweeter on the following day. So, be sure you bake enough to keep until the next day!

Ingredients (makes 6):
A:
1¼ cup all purpose flour
1½ tsp baking powder
½ tsp baking soda
Pinch of salt

B:
60g unsalted butter, softened
¼ cup caster sugar
½ tsp vanilla essence
1 egg, beaten
¼ cup buttermilk
Handful of chopped walnuts
1 banana, mashed

Directions:

  1. Preheat oven to 190C.
  2. Mix and sift together A ingredient. Set aside.
  3. In a large mixing bowl, beat the butter with sugar until creamy. Stir in the vanilla essence and egg, whisk until well combined.
  4. Fold in the flour and butter milk in batches. Stir in the mashed banana and walnuts.
  5. Spoon the mixture into muffin cups and put some walnuts on the top if desired.
  6. Bake for 5 minutes at 190C, turn down the oven temperature to 175C and bake for another 15 minutes.

  5. for the buttermilk u wrote 1/4../ it is 1/4 what? tablespoons or teaspoons? the muffin looks great btw...
