Chinese Style Salt & Prawn with Plum Sauce / 梅酱椒盐虾

Peppery Salt Prawn

Ingredients (3-4 servings):
400gm prawn (medium size)
1/2 tsp salt
1/2 tsp ground white pepper
1/4 tsp chinese
5-spice powder
1 tbsp all purpose flour
2 tsbp corn flour
2 tbsp Plum Sauce
Oil for deep frying

Methods:
  1. Clean and devein the prawn, then make a deep cut the back but do not cut through.
  2. Season with the salt, pepper and five-spice powder for about 15 minutes.
  3. In a medium bowl, mix together all purpose flour and corn flour. Add in the prawn and shake the bowl gently to coat. 
  4. Shake off extra flour and deep fry till golden brown.
  5. Drain on a paper towel. Place prawns on a serving plate and drizzle the plum sauce over them. Or serve with the plum sauce at the side as dipping sauce.
