Apple Cake

A simple apple cake for people with not-so-sweet sweet tooth. Recipe for the cake is available here, I have added apple slices on the top and sprinkled with cinnamon sugar. This cake is moist and has muffin-like texture, not sure if it supposed to be like that. Burns on the edges perhaps my oven is too hot, need to lower the oven temperature next time.

Ingredients (18x18 cm):
1 apple, peeled and chopped
2 tbsp sugar
100g butter, room temperature
80g castor sugar
2 large eggs
100ml fresh cream/whipping cream
150g all-purpose flour
1 tsp baking powder

Toppings:
1 apple, seeded and sliced thinly
1 tbsp sugar
¼ tsp ground cinnamon

Methods:
  • Grease and line the baking pan with baking paper. Preheat oven to 180degC.
  • Rub chopped apple with sugar and cook till apple is softened. Set aside and allow to cool completely.
  • In a large mixing bowl, beat together butter until creamy. Stir in sugar and continue to beat until the colour turns pale.
  • While beating, add in eggs one at a time. Then add in fresh cream, mix well.
  • Sift together flour and baking powder and fold into the mixture.
  • Stir in cooked apple together with the water.
  • Pour batter into the baking pan, arrange apple slices on the top and sprinkle with cinnamon sugar.
  • Bake for 30-35 minutes. Cool on rack.

  4. Lydia, I think torta di mele is really supposed to have a muffin-like texture. Never mind the charred edges, that looks really, really good, perfect with ice cream!

  8. Hi Missy, I tried both red and green apple. Green apple (big one) tasted better, I used smith green apple. If the apple is small, use 2 apples for the cake and another 1-2 for topping (if desired).
