I have not done with CNYB posting actually, too busy to edit photos and blog about those bakings. So, blog about this loaf I baked some times back. I always baked plain bread, but this loaf was baked with mixed fruits and oat. In fact, it was baked with last bit of everything, bread flour, yeast, mixed fruits and oat. I am trying to finish up stocks in the pantry before moving to save some troubles in packing.
This loaf was so soft and moist that my mom refused to call it bread. She thought it had similar texture as one type of Chinese steamed cake.
Ingredients (1 loaf):
1¼ cups water
2 tbsp butter
1 teaspoon salt
1½ cups bread flour
1½ cups all-purpose flour
½ cup instant oats
2 tbsp brown sugar
1½ tsp active dry yeast
½ cup mixed fruit (pre-washed)
Methods:
- Prepare dough in bread maker, using "Dough" mode. It took 90 minutes with my bread maker.
- Turn dough onto a lightly floured surface, punch the air out then form into desired shape or place dough in a loaf pan.
- Let it rise second time for about 30 minutes or until it is doubled in size.
- Preheat oven at 175ºC and bake for 30-35 minutes. Cover the surface with foil last 10 minutes of baking if desired.
- Cool on rack.

Bread will have "compact" or sticky look if slicing before completely cooled. :-)
