I am trying to add more colours to our diet recently. To be specific, I have been 'cooking' up some experiments with beetroot - a pretty new ingredient for me actually. Beetroot is well-known for its health benefits such as antioxidants and nutrients for ages, but I only get to know about this little gem few years ago.
Beetroots found in hypermarkets in my area were all bald, I guess leaves were snipped off to prevent them from growing further. I yet to taste the beet leaf, any idea what it tastes like?

Ingredients:
150 g Ribs or Kampung /Free Range Chicken
50 g Dried Oyster, soaked (reserve the water)
100 g Beetroot, chopped
100 g Carrot, chopped
100 g Radish, chopped
2-3 slices Ginger
1½-2 lt. Water
Salt to tasteMethods:
In a large pot, bring water to boil. Place ribs or chicken in a large bowl, scald with boiling water and drain. Then add chicken into the pot with boiling water. Add all other in ingredients except salt into the pot and let it simmer for about an hour. Add salt to taste.
The soup looks lovely!
ReplyDeleteBeet greens taste a bit like swiss chard when cooked. They are mild, nutty, and sweet. Also a bit like spinach, but with more flavor.
I love the vibrant colour of this soup! and it sounds really healthy too!
