Made some dragon fruit cupcakes with cream cheese frosting. My first attempt at making glazed fruit failed badly, those fruits were like bathed in thick syrup. Any idea how to make glazed fruit? I want the one with crispy coating.
Hi Lydia! The cupcakes still look really nice regardless. I would think the syrup used for dipping the fruits might be cooked to a later stage (crack or 144°C). As I've not done it before, I'm not sure if you should let them dry as is, finish it in the oven, or maybe even deep fry them :)

I must admit I've never tried dragon fruit, must give them a try.
Regarding the glaze; have you tried the following:
1. Add the glaze ingredients to a pan and bring to a boil.
2. Lower to a medium heat and simmer until the mixture is thick but pourable.
3. Remove from heat and let the glaze cool for a little before pouring over the fruit.
4. Put the glaze in the refridgerator while you carry on cooking.
