I can hardly seen green mango at the hypermarket where I usually shop for my groceries and fresh products. When I saw some at the wet market the other morning I grabbed one without further ado. I am a big fan of this salad it is a must order dish whenever we dine in a Thai restaurant.
Some restaurants offer options for extra toppings such boiled chicken feet and prawn. I like them all but always opt for chicken feet as it is not easy to prepare at home. To me, dried shrimps and anchovies are must ingredients in this dish they added little extra "umph".
Ingredients (makes 2-3 servings):
1 green(unripe) mango, peeled and shredded
1 small onion, sliced
1 red chili, seeded and sliced
½ carrot, shredded
1 stalk coriander, chopped briefly
Toppings:
1 tbsp dried shrimp, rinsed
2 tbsp dried anchovies, rinsed and fried
Some roasted peanuts or cashew nuts
Dressing:
1 tbsp fish sauce
1 tbsp light soy sauce
1 tbsp lime juice
1 tbsp sugar (+/-)
1 tsp sweet chili sauce
Methods:
Dressing: Mix all ingredients together and stir until sugar is dissolved. Set aside. In a large mixing bowl,toss together mango and vegetables with dressing. Transfer salad to serving plate and add toppings just before serving.
