Date and Walnuts Oatmeal Cake /红枣核桃燕麦蛋糕


This is a sugarless, flourless and oil-less oatmeal cake. It is a healthy snack that you should have it readily available especially when you are on diet. Good for breakfast too. It has great texture, moist and mild sweetness.

The original recipe is from 瑞士不吃糖@小红书 (lit. Little Red Book). The cake in the first photo was baked following the recipe to the letter. It is pretty easy to make, just mix together all the ingredients and bake it. Later I tried my own version too by blending together all the ingredients in a blender, then add extra walnuts and sesame seed for the toppings. I must say this version is more cake-like and kids friendly. Different in texture but taste wise almost the same.

前阵子刚好在找燕麦食谱的时候有朋友分享了瑞士不吃糖@小红书的无油无糖无粉的低卡蛋糕就做了。第一张图片的是跟着食谱走,只需搅拌均匀即可。第二次做时因为哥弟俩不喜欢有坚果的糕点所以就自己改良一下,把所有材料放进搅拌机里搅成糊状再烤。个人觉得这个版本比较像蛋糕而且小孩也会喜欢。

Date and Walnuts Oatmeal Cake 
红枣核桃燕麦蛋糕 

Ingredients (17cm x 6cm x 5cm):
2 Bananas, mashed
1 no. Egg, lightly beaten
60 g milk
80 g Oatmeal
3 g Baking powder
50 g Red date (seedless), cut into halves
30 g Walnuts
15 g Black Sesame Seeds

Methods:
  1. Preheat the oven at 170°C.
  2. Bring together all the ingredients in a mixing bowl. Mix well.
  3. Transfer the batter in to a greased loaf pan or lined with baking paper.
  4. Bake for 35 mins.
  5. Remove from oven and allow to cool completely on a wire rack.
