Double Chocolate Cake / 双倍巧克力蛋糕


I baked this cake exactly a year ago for the big boy's 13th birthday. It is an One-Bowl Chocolate Cake with whipped chocolate-cream frosting, decorated with fruits in season. Rich and moist. 

One-bowl cake is very easy to make, just mix all the ingredients until well combined then bake it. And, the best part is you need to wash only one bowl. You can use any of your favorite frosting for this cake.

Double Chocolate Cake / 双倍巧克力蛋糕

Ingredients (6" or 15 cm round cake):
200 g Granulated sugar 
110 g Cake flour 
70 g Unsweetened cocoa powder 
4 g Baking powder 
4 g Baking soda 
3 g Salt 
1 Egg 
120 g Milk 
50 g Vegetable oil 
4 g Vanilla extract 
120 g Boiling water

Frosting
300 ml Whipping cream
100 g Dark chocolate chips

Decorate
Strawberries, chocolate bar (I used KitKat) & mint leaves

Methods:
Cake
  1. Preheat oven to 170°C. Grease and flour the baking pan.
  2. In a large mixing bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt.
  3. Add the eggs, milk, oil and vanilla, mix on medium speed for 2 minutes.
  4. Stir in the boiling water, mix until well combined. 
  5. Pour the batter into the prepared pan.
  6. Bake 40 to 45 minutes in the preheated oven or until a toothpick inserted in center of cake comes out clean. 
  7. Cool in the pan for 10 minutes, then remove to a wire rack and allow to cool completely.
Frosting
  1. Heat the whipping cream, melt in the chocolate chips. Cool completely.
  2. Whisk the chocolate cream until stiff peaks, over a bowl of iced water. 
Decorate
Slice the cake into 2-3 slices, decorate the cake with the whipped cream as desired.

This year, I baked him a Tiramisu but it was requested by the little one when the big boy said he will leave everything to me. I kept the cake in the freezer 2-3 hours before serving, it tasted like ice-cream cake. So good!  

Birthday boy, he is 14!
