Milk Bread / 牛奶面包 / 牛乳食パン

This size is 1 kin (1斤), about 450g.

Unlike a typical Japanese family, we usually have either toast or sandwiches for breakfast. I asked the boys many times if they want to have Japanese breakfast but they always opted for bread. This milk bread is our favorite for the time being. The bread remains moist, soft and fluffy the next day. 

Loaf bread in Japan is sold by kin (斤), it weighs from 340g to 500 g per loaf. The weight is depend on the type of flour used and the water absorption rate. I find that US and Canada produced flours have higher water absorption rate than those produced in Japan. I am not sure about those produced in other countries though, please adjust the amount of liquid accordingly. 

This is a 2-kin loaf baked without the lid, about 900g. 

Milk Loaf / 牛奶吐司 / 牛乳食パン
 (1斤/kin H12xW12xL13.5cm)

Ingredients:
250g Bread flour
190g* Fresh Milk, room temperature
40g Sweetened condensed milk 
4g Salt
3g Instant dry yeast
25g Butter, room temperature

*Depending on the flour type, may not need all. 因粉而异可能不需要全量,请自行拿捏。




Methods:

  1. In a large mixing bowl, combine all the ingredients except the butter. 
  2. knead until a soft dough is formed. Then, add in the butter and continue to knead until smooth and elastic. When pull a thin film is visible.
  3. Cover with a plastic wrap, proof until it is doubled in size.
  4. Turn the dough onto a lightly floured working surface. Gently press the dough to remove air bubbles. DO NOT KNEAD at this stage or your bread will be hard.
  5. Divide and shape the dough into 2 equal size balls. Cover with plastic wrap, rest for 10 minutes.
  6. Roll out the dough ball into long rectangle shape, then roll up from the short side to form a thick cylinder shape. 
  7. Please the dough into a well greased pan. Cover with a plastic wrap, let it rise up to 80% of the mold. Put the lid on. 
  8. Preheat oven at 180°C, then turn the temperature down to 170°C. Bake for 30-35 mins.
  9. Remove from the pan, allow to cool on a wire rack.
