Nikumaki Onigiri is a popular dish for bento/lunch box. The flavorful pan-fried roll is coated with lightly sweetened teriyaki-like sauce which make it so irresistible. In fact, nikumaki/meat wrap is a popular home-cooking in Japan. You may find a variety of nikumaki recipes online. Tofu, mushroom, asparagus, eggplant, and Chinese cabbage are some of the popular ingredients for nikumaki.
Personally, I like to use pork belly for this but pork shoulder works perfectly fine. And, you can even use beef or bacon. The most important is to use thin sliced meat for a neat roll. As for the rice, add a tablespoon of all-purpose rice to the cooked rice if you are using long grain rice (Jasmine rice). It helps to hold the grains together better.
肉卷饭团是日本便当里的常客。煎香的肉卷淋上类似照烧的酱汁,大人小孩都爱吃。在日本,肉卷是一个非常受欢迎的家庭料理。最常见的肉卷食材包括豆腐,菇类,芦笋,茄子,大白菜等。我个人喜欢用五花肉薄片但其他部位的也可以,只要是薄片就行。牛肉或培根也可以哦!用泰国米的话饭煮好后加一大匙面粉拌匀,这样饭团比较容易成型。
Nikumaki Onigiri / 肉卷饭团
2 cups Short grain rice (Japanese rice)
12 pcs Pork belly slices (thinly sliced, 20 cm in length)
Salt
Pepper
All-purpose flour
1 tbsp cooking oil
Sesame seeds for garnish (optional)
Sauce (mix together):
1 tbsp Water
1 tbsp Soy sauce
1 tsp Sugar
1 tbsp Sake
Methods:
- Cook the rice in a rice cooker as usual.
- Divide the rice into 12 equal portions, and shape them into cylinder shape.
- Wrap a slice of the pork around the rice ball loosely.
- Sprinkle the salt and pepper over the surface, then coat or dust with the all-purpose flour.
- Preheat the oil in a frying pan, seal side down, pan-fry the rolls with medium heat until golden brown.
- Add in the sauce, cook with low heat until the sauce is reduced. Make sure each onigiri is coated with the sauce.
- Transfer to a plate, garnish and serve warm.
