No-Knead Focaccia Bread / 免揉佛卡夏面包


We are bread lovers. Our breakfasts are usually savory buns or assorted sandwiches made with the home-baked bread loaf. The boys prefer soft bread but T and I like crusty bread rolls and focaccia very much. Occasionally, I bake focaccia for the adults breakfast, and the leftover for the boys dinner served together with Japanese curry or  Japanese  beef stew

I have been using this focaccia recipe since we were living in Australia many years ago. I like how easy it is and the best part is that I can bake it with any baking pan I have. The aroma of the bread in the baking is so good and inviting. If you have time, let the dough rise in the fridge overnight (step 3). 

我家都是面包控,几乎每天都早餐都吃面包。除了用自家吐司做成的各式三文治和咸味面包以外,脆皮小法棍和佛卡夏面包也是餐桌上的常客。佛卡夏面包是一种意大利香料面包,一般会在表面撒上粗盐粒,或在表面小洞里填入香料如迷迭香,蒜和黑橄榄等。形状随意,厚度依个人喜好大约2-4公分。佛卡夏面包可做成三文治,也可以搭配主食或浓汤吃。我们家哥弟俩最爱搭配日式咖喱日式炖牛肉吃。

这免揉佛卡夏面包食谱是从我早期住在澳洲时开始用到现在。记得最初是贪它做法简单也不需要特别模具,结果做了几次后就爱上了。迷迭香,蒜香和淡淡的橄榄油香味,是越嚼越香。

No-Knead Focaccia Bread
   免揉佛卡夏面包   

INGREDIENTS (25x20cm)
400 g Bread flour / 高筋面粉
4 g Instant dry yeast / 即溶酵母
350 ml 40°C warm water / 温水
20 g Sugar / 砂糖
7 g Salt / 盐
3 tbsp extra-virgin olive oil / 橄榄油
Unsalted butter / 无盐牛油

Toppings
Coarse sea salt / 粗盐
Extra-virgin olive oil / 橄榄油
Rosemary / 迷迭香 
1 tbsp Grated garlic / 蒜蓉
1 tbsp Melted butter / 融化牛油

METHODS
  1. Combine the water, yeast, sugar and salt in a large bowl. Stir until the yeast is dissolved completely.
  2. Add in the flour, mix with a spatula until all of the flour is incorporated and a shaggy dough is formed.
  3. Add in 2 tablespoons of extra virgin olive oil, turn the dough to coat. Cover the bowl with a plastic wrap and let it rise at room temperature until doubled in size.
  4. With a rubber spatula or a scraper, scrape and fold the dough to remove air bubbles and to form a rough ball shape.
  5. Transfer the dough into the pan greased with butter, spread out a little. Cover with a lamp cloth, let it rise until doubled in size.
  6. Drizzle about 1 tablespoon of extra olive oil over the surface, dimple the dough all over with your fingers. Sprinkle with the coarse salt and rosemary.
  7. Bake in a preheated oven at 200ºC for 20 minutes. 
  8. Mix together the grated garlic and melted butter, brush focaccia with the garlic butter. Continue to bake for another 5-10 minutes. Cool on rack.
