Hiyashi Chuka / 日式中华冷面


Hiyashi Chuka (Chinese Cold Noodle) is one of the so called Chinese dishes invented by Japanese. When I had it for the first T was surprised to learn that I, as a Chinese, had never had it before. Another example of Japanese invented Chinese dish is Tianjin-han (Tianjin Rice). Chinese from Tianjin province living in Japan claimed that they have never heard of it before coming to Japan.

Well, Japanese love all kind of cold noodles in the summer months. For this cold noodles, thin ramen noodle or Wonton noodle is used. The common toppings are shredded cucumber, ham, omelet and tomato. For the homemade version, you can add any toppings to your liking. With the vinegar-based dressing, it is an appetizing dish to enjoy in the hot summer days. It is recommended to add a drizzle of sesame oil and some toasted sesame seeds to enhance the flavor.

这是一道日本人自创的中华冷面。第一次吃的时候我家老爷问马来西亚有这么多华人又长年夏日,没有这种冷面吗?其实在日本有很多日本人自创的中餐,除了这冷面还有天津饭等。在日的天津朋友都说在天津没吃过天津饭呢!

夏季日本人特别喜欢吃冷面,似乎所有面条都能做成冷面。中华冷面的面条是用类似云吞面或细拉面,吃起来有点碱的味道。把面煮熟后过冷水,加上佐料再淋上酸味酱汁即可上桌了。喜欢的话也可以加一点麻油和芝麻,冰凉香酸夏天吃起来还蛮开胃的。


Hiyashi Chuka (Chinese Cold Noodles)
日式中华冷面

Ingredients/材料 (makes 2/两人份):
2 portions Thin ramen/云吞面
1 Japanese Cucumber / 日本青瓜
4-5 Mini tomatoes/小番茄
4 slices Ham / 火腿肉 
2 Blanched okra / 秋葵
Boiled Prawn/ 水煮虾仁随意
2 Eggs / 鸡蛋
1 tsp Cooking oil / 食油
Sesame oil / 香麻油
Sesame Seeds / 芝麻

Dressing / 酱汁
3 tbsp White vinegar / 醋
1 tbsp Granulated sugar / 白糖
1 tsp Soy sauce / 酱油
4 tbsp Dashi stock / 柴鱼高汤
Salt to taste / 盐适量

Methods:
  1. Mix together all the ingredients for the dressing until sugar is dissolved. Keep in the refrigerator. If possible, prepare the dressing in advance.
  2. Whisk the eggs with a pinch of salt. Heat the oil in a non-stick frying pan, add in a thin layer of the egg mixture. Cook until the egg is done on low heat. Set the omelet aside.
  3. Cut the cucumber, ham and omelet into strips with the same length. Cut the okra and tomatoes into thin slices. Set aside.
  4. Heat a pot of water to a boil, cook the noodles for 1-2 minutes. Drain then rinse the noodles under running tap water.
  5. Soak the noodles in a pot of iced water for a few minutes. Drain well.
  6. Arrange the noodles and topping in a bowl, then pour the dressing over. Top with the sesame oil and sesame seeds if desired. Enjoy!
做法:
  1. 预先把酱汁的材料混合收进冰箱冷藏。
  2. 鸡蛋加点盐巴打散,然后用不沾锅加点油煎成薄片。
  3. 把青瓜,火腿肉和煎蛋切成同等长条,秋葵和番茄切成薄片。
  4. 煮一锅水,加入面条煮1-2分钟。先用水冲洗降温再冰镇几分钟,然后捞起沥干水分。
  5. 面装盘,铺上佐料再淋上酱汁即可。加点麻油和芝麻会更好吃。
