Ikayaki / Squid Pancake / 墨鱼烧


Apart from the famous Okonomiyaki and Takoyaki, Ikayaki (squid pancake) is another delicious street food that you can enjoy in Kansai area. Although the way of making is similar to the Okonomiyaki but there is slightly different in texture. Ikayaki contains more flour thus it has the soft mochi-like texture. Some homemade Ikayaki is made with crab stick or fish cake instead of the squid. By the way, Ikayaki is also referred to the grilled squid. Don't be surprise if a grilled squid is served when you order an Ikayaki.

除了大家熟悉的大阪烧和章鱼烧之外,日本关西还有另一种有名的小吃 – 墨鱼烧。墨鱼烧跟大阪烧的做法相似但口感略有不同,墨鱼烧比较像饼卷吃起来糯糯的。有些家庭式的墨鱼烧是用蟹柳或鱼饼代替了墨鱼,也蛮好吃的。

Ikayaki / Squid Pancake / 墨鱼烧

Ingredients (makes 4):
1 Squid, thinly sliced
4 Eggs
1-2 tbsp Chopped green onion
1 cup Shredded cabbage
1-2 tbsp Cooking oil

Toppings
Okonomiyaki sauce
Mayonnaise
Chopped green onion
Katsuo-bushi (optional)

Batter
1 Egg
1 cup All purpose flour
1 cup Water
1 tsp Hon-dashi
Salt to taste

Methods:
  1. Combine all the ingredients for batter in a large mixing bowl. Mix well.
  2. Add in the sliced squid and chopped green onion. Mix well.
  3. Heat a non-stick pan, grease the pan lightly.
  4. Add and spread out 1/4 of the batter, then top with some shredded cabbage. Press down lightly.
  5. Push the pancake to aside, break in an egg, then flip and place the pancake over the egg.
  6. Fry both sides until well cooked. Transfer to a serving plate.
  7. Drizzle the sauce and mayonnaise over the top, garnish with the chopped green onion and katsuo-bushi if desired.
