Stir-fried Snake Bean with Sambal

Sambal Snake Bean

One of the favourite veggie dishes at my kitchen, both Tak and I love it very much. I do not know why sambal belacan goes very well with beans or peas. This dish was ready in 3 minutes with the homemade sambal belacan readily in the fridge.

Ingredients:
2 cups chopped snake bean (aka long bean)
1 tbsp cooking oil
1 bulb shallot, chopped
2 cloves garlic, chopped
Handful dried shrimp, soaked and minced
3-4 tbsp sambal tumis
Salt to taste
Methods:
  1. Heat oil in wok, stir in shallot, garlic and dried shrimp. Stir fry until fragrant or browned lightly.
  2. Add in snake bean and stir fry with high heat until the colour turned bright green. Stir in sambal and cook for another one minute or so.
  3. Read to be served.

If you are cooking a lot, lightly fry the snake bean first then toss in with sambal.
