Got this guinness meat pie recipe from Sunrise on Channel 7. In fact there were a lot of Irish recipes on cooking shows these few days in conjunction with the St. Pat's Day. I settled on this recipe as I have all the ingredients on hand and it is pretty easy to make. I have tried several meat pie recipes so far this is the best one.
Ingredients (makes 24):
1 tsp olive oil½ small brown onion, chopped
250g minced beef
1 tbsp tomato paste
1 tbsp gravy powder
½ cup frozen mixed veggies
½ can Guinness
salt and pepper to taste
2 cups mashed potatoes
24 pcs puff pastry shells (vol-au-vent cases)
Directions:
- Heat olive oil in a pan and stir in chopped onion. Saute until onion is softened.
- Stir in minced beef and cook for 1-2 minutes. Add in tomato paste, gravy powder and mixed veggies, stir to mix.
- Add in Guinness and let it simmer over low heat until the gravy is thickened.
- Remove from heat.
- Assemble: Fill each puff shell with ½ tbsp of meat filling and top with mashed potatoes. Sprinkle some crashed black pepper on the top and bake in preheated oven (200C) for 10 minutes or until the top is golden brown. (I did not bake it as I used freshly made filling. The meat filling can be made in advance, keep up to 3 days in the fridge or 2 months in the freezer.)
