Pumpkin Cuppies [Humble Little Cakes]

Pumpkin Cuppies

Little one has started taking solid food for about a month or so, there is always pumpkin sitting in the fridge rencently. I love this pumpkin cake, baked a few times and received possitive comments from friends and neighbour. I first baked this cake was in December 2008 when John started his solid. How time flies!


For these cuppies, I halved the pumpkin cake recipe and managed to get 12 cuppies. Topped with some pumpkin seeds, but John picked them off one by one. Overall, the cakes were very soft, moist and not too sweet. By the way, do remember to keep cuppies in the fridge. Silly me, I forgot about that and the pumpkin chunks in it turned bad the next day.

    Thanks for the compliment. I did not use any special light for my photos but I do use a white cardboard for reflecting the light (sunlight). Just place a cardboard at the opposite direction of the source of light, model in the middle. Hope this helps.

  17. When I made my mini pumpkin pies, I broke both of these rules. Did it effect the quality of the pie crust? Maybe, but none of my tasters could tell. I even got the thumbs up from a friend who prides herself on her pie crusts.

  20. First Magazine or Woman's World Magazine had a recipe for pumpkin cake either last year or the year before. It made an AMAZING pumpkin cake but I lost it and I really wanted to make it this Thanksgiving. It was a pumpkin cake with a whipped cream topping. If anyone has it, can you please share?     I do not use any special light for all my photos, 95% of photos on this blog were taken with natural light and the rest with built-in camera flash.

    No, I did not use special light for photo shooting. 99% of photographs on my blog were taken with natural light, 1% with camera flash.

Here's how to turn a fresh pumpkin into a delicious pie. It's easy, fun, tasty and probably cheaper and it would be nice if you can add something about it to improve my recipe.
