Whenever we visited Japanese restaurant, we always ordered sashimi for adults and something cooked for J. Well, I got to choose the dish for him as I shared with him most of the time. I tend to order something that I seldom cook at home such as katsu-don, mushroom fried rice and salmon teriyaki. J loves salmon teriyaki very much, he could finish a bowl of rice with it. I think it is quite a lot for a 2-year old boy.
Since J loves salmon teriyaki, I am more than happy to cook for him. It is hard to get him to eat fish sometimes. Teriyaki is pretty easy to prepare with pre-prepared sauce, simply marinate fish or chicken in the sauce for an hour or so then either grill or pan-fry it.
Teriyaki sauce recipe is adapted from Practical Japanese Cooking cookbook, it can be prepared in bulk and store in the fridge up to a week.
Ingredients:
280ml mirin
160ml sake
160 ml Japanese dark soy sauce - contains <18% of salt (similar to Malaysian light soy sauce)
Methods:
Combine all ingredients in a sauce pan, bring to boil over high heat then simmer until the volume is slightly reduced (about 10%).
To cook chicken or fish teriyaki:
- Marinate chicken or fish (not too thick) in some sauce for an hour.
- Remove chicken/fish (pat dry with paper towel if desired), and reserve the sauce.
- Heat oil in pan (just enough to coat the pan) and pan-fry chicken/fish until almost done.
- Add in the sauce reserved, bring to boil then simmer until it is reduced.
- Serve warm with steamed rice.
