Tri-Root Soup [Mama, watermelon soup is yummy!]

3 roots soup

I am trying to add more colours to our diet recently. To be specific, I have been 'cooking' up some experiments with beetroot - a pretty new ingredient for me actually. Beetroot is well-known for its health benefits such as antioxidants and nutrients for ages, but I only get to know about this little gem few years ago.

Beetroots found in hypermarkets in my area were all bald, I guess leaves were snipped off to prevent them from growing further. I yet to taste the beet leaf, any idea what it tastes like?

The soup looks lovely!
Beet greens taste a bit like swiss chard when cooked. They are mild, nutty, and sweet. Also a bit like spinach, but with more flavor.
