Apple Cake With Streusel [My Way To Say Thank]

My dear hubby super love cakes with firm texture such as cheesecake, brownie and pumpkin cake. All sort of sponge cakes I baked so far he ate just a small bite for tasting, except those with heavy frosting. As for this apple cake, it has firm texture, moist and with crunchy topping. For the first time I found him eating two cuppies in one go.

I baked these cuppies for a mom from my boy's kindergarten actually, to thank her for her help in recovering images from a faulty SD card of mine. Gave her yesterday morning when I send my boy to kindergarten, she told me that her boy liked it too. I was wondering if they like the cinnamon aroma, glad that they did.

Ingredients (makes 10-12):
  • 1 apple (+/-250g before peeling), peel and chop
  • 2 tbsp sugar
  • 40 g raisin
  • 40 g maltose
  • 100 g unsalted butter, room temperature
  • 80 g sugar
  • 2 no. large eggs, whisk briefly
  • 150 g all cake flour, sift together with baking powder and cinnamon powder
  • 1 tsp baking powder
  • 1/4 tsp cinnamon powder
  • 100 ml milk

Streusel (mix together to form crumbs):
  • 40 g flour
  • 30 g butter
  • 40 g sugar (1/2 granulated sugar and 1/2 rough sugar)
  • 1/4 tsp cinnamon powder

Method:
  1. Mix chopped apple with 2 tbsp of sugar, cook on stove till apple is softened then mix in raisin. Set aside to cool. Just before adding into batter, stir in maltose.
  2. Beat butter with sugar until creamy, add in egg a little bit at a time and continue to beat till light, fluffy, and pale in colour.
  3. Stir/fold in flour mixture alternate with milk, start with 1/3 of flour, 1/2 milk, 1/3 flour, 1/2 milk and 1/3 flour. Be careful not to over mix.
  4. Stir in cooked apple together with the liquid, mix till just combined.
  5. Transfer to paper cups, up to 70% full. Add streusel topping over the top.
  6. Bake in preheated oven at 180C for 25-30 minutes.
