Chinese Yam, Sweet Corn, Carrot & Pork Rib Soup / 山药玉米萝卜排骨汤


Lately, soup is the most important part of the dinner for T. No matter how sumptuous the dishes are, there must be a soup EVERY day. I guess I have turned him into a Cantonese in term of the soup culture. He likes Chinese style long-boiled soup very much, now he even remember that we have a pressure cooker at home that can cook all his favorite soups like magic.

Frankly, life is so much easier with a pressure cooker. I personally think that every household should have one, it doesn't matter if it is an old fashion stove type or a modern electric pressure cooker. With a pressure cooker, hearty pork rib soup like this one is ready to serve in 30 mins. It will take much longer time cooking the traditional way. 

最近我家老爷真烦,每天都会问我晚餐煮什么汤,有时还会下单点老火排骨汤。会不会是我把他养成了广东人的胃了?前几天他自己买了牛筋要吃炖萝卜,懒着的我想忽悠他说牛筋要炖很久晚餐来不及了。他立马回了一句:你不是有压力锅吗? 惊,从来不管厨房的他也知道我们家有压力锅!话说回来压力锅真好用,这样的排骨汤30分钟内就搞定了。我们家的是老爷的奶奶留下来的,都快成古董了还是很好用。强烈推荐压力锅,能力范围内备一个呗。

Chinese Yam, Sweet Corn, Carrot & Pork Rib Soup
山药玉米萝卜排骨汤

Ingredients (4-5 servings):
300 g Pork ribs
1 Sweet Corn
1 Carrot
10-15 cm Chinese Yam
Wakame seaweed
1 tsp Hon-dashi (Japanese fish stock)
Salt to taste

Methods:
  1. Put the pork ribs in a pot of water, bring to a boil and let it boil for 2-3 minutes.
  2. Remove the ribs and rinse under the running tap water. Drain, set aside.
  3. Boil about 1.5 liter of water in a large pot. 
  4. Meanwhile, cut the sweet corn, Chinese yam and carrot into chunks.
  5. Add the pork rib and vegetables into the pot of boiling water. Let it simmer over low heat for about 30 minutes.
  6. Add in the hon-dashi and salt to taste, continue to simmer for another 30 minutes or until the meat is tender.
  7. Serve warm with the wakame if desired.

Pressure cooker way:
  1. Put the pork ribs in a pot of water, bring to a boil and let it boil for 2-3 minutes.
  2. Remove the ribs and rinse under the running tap water. Drain, set aside.
  3. Cut the sweet corn, Chinese yam and carrot into chunks.
  4. Combine the vegetables and pork rib in the pressure cooker pot, add in about 1.5 liter of water and hon-dashi. 
  5. Bring the pot to pressure (stove type), cook for 15 mins then turn the heat off.
  6. When the pressure is released, add in salt to taste. Serve warm with the wakame if desired.
