We had lunch at the newly opened Indian restaurant near Nara Station the other day. The restaurant offers pretty decent Indian dishes, I am surprised to find stir fried okra with panch phoron in the set lunch. I always order this okra dish at the mamak stall when living in Singapore.
It is a simple okra stir fry dish, so aromatic and flavorful. Since I have okra and curry leaves in my veggie garden I cooked it for the boys the next day. Something new for the boys, trying to introduce them new dishes whenever possible. Glad that both the old and young boys loved it.
Panch Phoron |
Stir Fried Okra with Panch Phoron
印度香料炒秋葵
150 g Okra, cut into bite size
1 Onion, slices
1 no. Egg
1 tsp Panch Phoron
1 tbsp Coconut oil
7-8 Curry leaves
1 clove Garlic, chopped
Pinch of Turmeric powder
Salt to taste
Methods:
- Heat the coconut oil in a frying pan.
- Add in the garlic, curry leaves, onion and panch phoron. Stir fry a few seconds with low heat.
- Add in the okra and a pinch of turmeric powder. Stir fry until the okra turn soft.
- Crack in the egg, stir to mix, then add salt to taste.
- Transfer to a serving plate, serve warm together with steamed rice.
Notes:
If desired, you may add in some curry powder or masala spices.
