I noticed that J(3y7m) likes coleslaw very much. Every time we had KFC, he asked for coleslaw for sure. Then he decided to call it "KFC's veggies" for both restaurant and homemade versions. Well, coleslaw is the only vegetable dish available at KFC.
My old version of coleslaw was made with evaporated milk which T did not like it at all. Now, I always use mayonnaise together with some other sauces. Please note the measurement for seasoning is for reference only, I always taste along as I prepare this salad.
Ingredients:
200g cabbage, slice as fine as possible
1 small carrot, shredded
Dressing:
4-5 tbsp Japanese mayonnaise
1 tbsp Sugar
1 tbsp Rice vinegar/Lemon juice
1 tsp Worcestershire sauce
Pinch of salt
1-2 tsp Ketchup (optional)
Methods:
- In a large mixing bowl, mix together cabbage and carrot.
- Add in dressing and mix well.
- Chill in the fridge before serving.
I served coleslaw with fried rice and some hams, it was an east met west kind of lunch.
