Sweet Potato Salad [Make It Healthier]

Sweet Potato Salad

T loves potato salad very much, as and when he will request for it. To make it a healthier option, I substituted potato with sweet potato as it has low GI even though both of them contain similar amount of calories. To make it even healthier, I used 50% calories reduced mayonnaise.

Despite of the changes, it tasted similar to potato salad I used to made. Importantly, the big fan of potato salad loved it very much. Purple is my favourite colour, so my next sweet potato salad will be purple!

This looks great! I just made Japanese-style potato salad last week to go with spare ribs, but never thought of making it with sweet potatoes. My boyfriend would love it.

Check out my site sometime too! I've been a longtime reader of yours =)
