Sweet Potato Salad [Make It Healthier]

Sweet Potato Salad

T loves potato salad very much, as and when he will request for it. To make it a healthier option, I substituted potato with sweet potato as it has low GI even though both of them contain similar amount of calories. To make it even healthier, I used 50% calories reduced mayonnaise.

Despite of the changes, it tasted similar to potato salad I used to made. Importantly, the big fan of potato salad loved it very much. Purple is my favourite colour, so my next sweet potato salad will be purple!

Sweet Potato Salad
Sweet Potato Salad (Calories: 395cals, Fat:15.4g, Protein:7.2g, Carb:52.8g)

Ingredients:
400 g orange sweet potato, peeled and steamed
3 tbsp mayonnaise (kewpie),50% calories reduced
50 g Japanese cucumber, thinly sliced
*1/4 tsp salt
1 stalk spring onion, chopped
Salt and pepper to taste

Methods:
  1. Rub cucumber with *salt and set aside for about 10 minutes, then rinse and pat dry with paper towel.
  2. Mash two-third of steamed sweet potato, and cut the rest into chunks.
  3. In a large mixing bowl, bring together (1), (2), mayonnaise and spring onion. Mix till just blended.
  4. Add salt and pepper to taste.
  5. Chill before serving.
